🠴 啤酒 🠶

啤酒(學名以其主要穀物原料 大麥 Hordeum vulgare 為代表,酒液本身無獨立學名)又稱麥酒、Beer、麥芽發酵酒。由大麥芽、啤酒花、酵母與水製成,經上層或下層發酵形成不同風味與酒體。

常見種類包含**拉格(Lager)**如皮爾森、深色拉格;**愛爾(Ale)**如淡愛爾、IPA、波特、世濟;小麥啤酒(Weissbier);黑啤(Stout);酸啤(Sour);以及綜合型工藝啤酒。不同種類由發酵溫度、酵母型態與麥芽烘焙程度決定風味。

性味歸經:味甘微苦、性涼偏平,入胃、脾、肝經。中醫認為啤酒具清熱、利濕、暢氣、微行血之性,但因含酒精,脾胃虛寒或易脹氣者不宜過量。啤酒花的苦味帶有清熱與降逆特性,麥芽偏甘能和中健脾。

功效上,啤酒可促進食慾、助消化、改善油膩負擔、輕微放鬆情緒、提升循環。烘焙麥芽含香氣成分可刺激味蕾,啤酒花具微抗氧化作用,氣泡則能促進飽腹感。適量飲用能緩解口乾與增添食物風味。

應用方面涵蓋飲用、搭餐、料理三類。飲用時適合搭配炸物、鹹點、烤肉、披薩、小吃等。料理上常用於啤酒燉肉、啤酒燉雞、啤酒滷味、啤酒麵糊炸物、啤酒海鮮煮、啤酒燉牛肉,可去腥、軟化肉質並增添麥香層次。啤酒亦可作為醃料基底,搭配香料與醬料使用。
