🠴 牛腩 🠶

學名:屬牛科 Bos taurus domesticus( 為主要來源部位),別稱:牛胸腹肉、腩條、腹腩。指牛隻胸腹部位帶筋帶油的肌肉組織,含豐富結締組織與膠原蛋白,口感軟嫩帶嚼勁,是華人飲食中常見的燉煮食材。

常見種類:依部位與油筋分布大致分為前腩(筋多略韌、適合燉煮時間較長)、後腩(脂肪較均勻、口感較滑嫩)、爽腩(筋膜清晰、有彈性)、金錢腩(筋多而呈圓形花紋)、坑腩(肉多筋少)。

性味歸經:性平,味甘;歸脾、胃經。功效:補脾益胃、強健筋骨、補中益氣。牛肉本具滋養作用,牛腩含膠質較豐,能助筋骨靈活與體力恢復,亦有助補充鐵質與蛋白質。

應用:多用於燉、滷、紅燒、咖哩、湯品等長時間烹調料理,使筋膜軟化釋出膠質。經典料理如台式清燉牛肉湯、紅燒牛腩麵、廣東清湯牛腩、咖哩牛腩、番茄牛腩煲等。搭配白蘿蔔、番茄、馬鈴薯、辛香料可提升鮮甜與去腥,適合作為家庭日常菜餚與餐館主餐食材。
