🠴 大白菜 🠶

大白菜(學名 Brassica rapa subsp. pekinensis),別稱白菜、結球白菜、黃芽白、包心菜(北方稱),屬十字花科(Brassicaceae)芸薹屬二年生草本植物。其葉片闊大柔嫩,基部抱合形成球形或橢圓形菜心,是冬季重要蔬菜。臺灣常見種類有結球型、半結球型與不結球型,如「娃娃菜」、「紹菜」等品種。

性味歸經:性平,味甘,入胃、腸經。具有清熱除煩、利水消腫、潤腸通便、養胃生津之功。《本草綱目》載其「利腸胃,解酒毒,止渴除煩」。

功效方面,大白菜含有豐富的維生素C、β-胡蘿蔔素、鉀、鈣及膳食纖維,能促進代謝、增強免疫、助排毒與調理腸胃功能。

應用上,可炒、燙、燉湯、涼拌或醃製,如酸白菜、火鍋配菜或蔬菜卷。其味清甜柔潤,適合與豆腐、豬肉、海鮮同煮,為冬季養生及家庭常備蔬菜之一。
