乾麵筋是將新鮮麵筋經脫水或風乾處理後製成的食品,外觀呈淡黃色或米白色,質地較硬且彈性良好。乾麵筋富含植物蛋白、胺基酸及少量礦物質,是素食者的重要蛋白來源。相比新鮮麵筋,乾麵筋便於長期保存與運輸,使用前通常需泡水或煮軟,再用於烹調。
