金針花(學名:Hemerocallis fulva),又名萱草、忘憂草、黃花菜,為百合科多年生草本植物之花蕾,是中國傳統的食藥兼用植物。其花色金黃、香氣淡雅,味甘滑嫩,常見於炒菜、湯品與藥膳中。古籍《本草綱目》記載:「萱草,安五臟,令人忘憂。」

中醫認為,金針花性涼,味甘,歸肝、胃、大腸經。具有清熱利濕、涼血解毒、安神利尿、健胃通乳之功效。主治黃疸、小便不利、熱毒瘡腫、失眠煩躁、乳汁不通等症。入肝經可清熱解鬱、平肝安神;入胃經則和中止嘔、助消化。其涼性適合熱性體質者食用,有助排毒養肝、舒緩情緒。

現代營養學研究顯示,金針花富含蛋白質、膳食纖維、維生素A、C、鐵、鈣與類黃酮等營養素,具抗氧化、利尿降壓、保肝護腎、降脂與鎮靜作用。乾燥花蕾中含有黨參多糖與槲皮素,能促進新陳代謝、強化免疫功能。

綜合而言,金針花兼具清熱解毒、利尿安神、健脾養肝、潤腸通乳之效,是集食療與藥用於一體的天然健康蔬花,有「天然忘憂草」之美名。
