🠴 胡蘿蔔 🠶

胡蘿蔔(學名 Daucus carota var. sativus Hoffm.),別稱紅蘿蔔、甘筍、金笋,為繖形科(Apiaceae)二年生草本植物的根部蔬菜。原產於歐亞地區,現為世界各地普遍栽培蔬菜之一。臺灣常見種類依顏色分為橙紅胡蘿蔔、紅胡蘿蔔、紫胡蘿蔔、黃胡蘿蔔等;依形狀則有短圓型、長圓型、錐形等品系。

性味歸經:性平,味甘,入脾、肝經。

功效方面,胡蘿蔔具有健脾化滯、明目養肝、潤腸通便、補中益氣之效。《本草綱目拾遺》記載其能「補中益氣,安五臟」。其色紅入血,可補血養顏,且甘平不燥,適合脾胃虛弱、視力不佳、皮膚乾燥者食用。

應用上,胡蘿蔔為常見食蔬,可生食、涼拌、燉湯、炒食或打汁。在中式料理中常與肉類同煮以去腥增香;亦可作為燉補湯底、蔬菜汁、糕餅配料。在藥膳中常搭配枸杞、紅棗以養肝明目,為家常與養生兼具的食材。
