🠴 醬油膏 🠶

醬油膏,又稱濃醬油、甜醬油、黑醬油,是以醬油為基底,加入糖、澱粉、鹽與香料熬煮濃縮而成的黏稠調味品。其色澤深褐、質地濃厚、味道甘鹹並具光澤。常見種類有台式醬油膏(偏甜)、廣式醬油膏(鹹香厚重)、日式照燒醬型(帶微甜焦香)與素食醬油膏(以植物原料製成)等。不同品牌依糖量與濃稠度而呈現不同風味。

中醫認為,醬油膏性平,味鹹、甘,歸脾、胃、腎經。其功效有調和五味、開胃消食、潤燥生津、助脾和中。由於其以豆類發酵而成,含有部分胺基酸與微量礦物質,可適度補益氣血、增進食慾。

在應用上,醬油膏為台灣與東南亞料理中常見調味品。可用於滷味、燙青菜、壽司、便當、燒烤、滷肉飯等料理,增添色澤與濃郁香氣。亦常作為沾醬或拌醬使用,特別適合搭配豆干、豆腐、蛋、米飯等食材,具有提鮮、潤色與平衡口味的效果。
