🠴 八角 🠶

八角,又稱大茴香、八角茴香、茴母、八角香,為木蘭科植物八角樹(Illicium verum)之乾燥果實,因其果形呈八角星狀而得名。外表棕褐色,香氣濃烈,味甘辛。常見種類依產地與品質可分為廣西八角、雲南八角、越南八角等,其中以廣西八角香氣最為純厚。市售多見整粒八角與研磨八角粉兩種形式。

中醫認為,八角性溫熱,味辛、甘,歸肝、脾、腎、胃經。其功效有溫中散寒、理氣止痛、開胃化滯、助陽驅寒。常用於寒凝腹痛、脘腹脹滿、噯氣嘔吐、腎陽不足等症。八角能行氣解滯並溫補脾胃,對寒性體質者尤為適宜。

在應用上,八角為中式調味與藥膳香料要材,廣泛運用於滷味、紅燒、火鍋、湯品、燉肉等料理,能去腥增香、提味入味。常與桂皮、花椒、丁香、陳皮、草果等合用,組成五香粉或滷包。藥膳中可與羊肉、生薑同煮,以暖胃驅寒、補氣血,為冬季常用的芳香辛溫之品。
