白冰糖,又稱白晶冰糖、白砂冰糖,是以精煉白砂糖為原料,經溶解、過濾、結晶冷卻而成的大顆透明糖晶。外觀潔白晶瑩,質地堅硬,甜味純淨柔和,不易吸濕。依結晶方式與顆粒大小不同,常見種類有大塊冰糖、小顆冰糖、碎冰糖等。其用途廣泛,是中式甜品與藥膳常用的天然甜味來源。

中醫理論認為,白冰糖性平,味甘,歸肺、脾經。其功效為補中益氣、潤肺止咳、和胃緩急、解毒潤燥。甘能補中益氣、調和百藥,入肺能潤燥止咳,入脾可和中緩急、增進食慾。常用於治口乾咽燥、咳嗽痰少、氣虛乏力、脾胃不和等症。其性平不燥,較紅冰糖、黑糖更適合氣陰兩虛或兒童長期食用。

在飲食應用上,白冰糖常用於燉梨、燉燕窩、銀耳羹、桂花茶、藥膳湯品中,能增甜調味並緩和藥性;亦可入粥、糖水或甜湯,提升香氣與口感。白冰糖熔點高、溶解緩慢,適合長時間燉煮,可使食材味道更為圓潤甘潤。
