一提到「麻婆豆腐」,那可是川菜裡的火辣經典、白飯殺手中的王者!??這道菜的靈魂有七個字:麻、辣、燙、香、酥、嫩、鮮。 一個都不能少。豆腐要嫩得像剛睡醒的雲朵,入口即化;辣椒與花椒則聯手登場,先辣後麻、又香又勁,吃到嘴裡像放煙火一樣熱鬧~?

傳說麻婆豆腐的誕生,源自清朝成都陳興盛飯鋪的老闆娘陳劉氏,臉上有幾顆麻子,人稱「陳麻婆」。她做的豆腐香辣下飯,名氣傳遍整條街,後來大家就乾脆叫它「麻婆豆腐」。這故事一聽就覺得又可愛又傳奇~?

做法講究:「牛肉末要炒出香氣、豆瓣醬要炒出紅油」,再加入豆腐、湯汁、勾芡,最後撒上花椒粉,一鍋紅亮誘人、香氣撲鼻。那股麻香在舌尖打轉,讓人不自覺白飯一碗接一碗。
