紫甘藍(學名 Brassica oleracea var. capitata f. rubra),別稱紅包心菜、紫圓白菜、紅捲心菜,屬十字花科(Brassicaceae)甘藍屬二年生草本植物。其葉呈紫紅至深紫色,質地脆嫩,具淡淡甜味。臺灣常見種類有紅葉結球甘藍、紫球甘藍與進口紫高麗菜,多於冬季栽培。

性味歸經:性平,味甘,入脾、胃經。具健脾和中、潤腸生津、清熱解毒、補血強身之功。《本草綱目拾遺》載其「益氣補中,和腸胃」。

功效方面,紫甘藍富含花青素、維生素C、K、葉酸及膳食纖維,能抗氧化、促進血液循環、強化血管與維持皮膚健康。花青素亦助於護眼與延緩老化。

應用上,紫甘藍常用於沙拉、清炒、燉菜、涼拌或醃漬,色澤艷麗,口感爽脆。其鮮紫色常作為料理點綴與健康食材,亦可用於果汁或天然食品染色。
