🠴 蘆筍 🠶

蘆筍(學名 Asparagus officinalis L.),別稱石刁柏、龍鬚菜、露筍,為百合科(Liliaceae)多年生草本植物。原產歐洲南部與西亞地區,現於世界各地廣泛栽培,臺灣中部與南部為主要產區。依栽培方式與外觀可分為綠蘆筍、白蘆筍、紫蘆筍等種類,其中綠蘆筍最常見,白蘆筍則以柔嫩著稱。

性味歸經:性涼,味甘、微苦,入肺、脾、腎經。

功效方面,蘆筍具有清熱生津、利尿消腫、潤肺止咳、養陰解毒之效。《本草綱目拾遺》記載其「潤肺止咳,利小便,解毒熱」,常用於肺熱咳嗽、口渴、尿少水腫及暑熱煩悶等症。其嫩莖含多種維生素、礦物質與天門冬素,有助於強身與調理氣血。

應用上,蘆筍為高級蔬菜之一,可清炒、涼拌、汆燙、燉湯或入沙拉。常與蝦仁、雞肉、干貝搭配,風味清爽鮮嫩。亦可製成果蔬汁或入藥膳,用於清熱利尿、滋陰養顏之食療。
