刺參(學名 Apostichopus japonicus),為海參科(Stichopodidae)海參屬棘皮動物,又名黑海參、沙噀、梅花參、海鼠等,是常見可食用海參品種之一。其體表具明顯肉刺,體色多為黑褐或暗綠,分布於台灣、東海及日本沿岸海域,棲息於海底沙泥或岩礁間,以海藻與碎屑為食。常見種類依外形與產區分為北海刺參、南方刺參、乾刺參等。

性味歸經:性溫,味甘、鹹,歸腎、心、脾經。

功效方面,刺參具有補腎益精、養血潤燥、強壯筋骨、滋陰補虛之效。《本草綱目拾遺》載其「補腎益精,治虛損羸瘦」。主治體虛乏力、陽痿遺精、貧血虛弱、產後或術後調養等症,並有助改善免疫力與延緩老化。

應用上,刺參為珍貴食材,可製成燉湯、涼拌、紅燒或煮粥,質地滑潤、富膠質,為高蛋白、低脂肪之養生食品。中醫藥膳中常與枸杞、當歸、黃耆等同煮,以增補虛益氣之功,為滋補強身的上品海味食材。
