太白粉,又稱樹薯粉、蕃薯粉、馬鈴薯粉、地瓜粉或澱粉粉末,是由多種含澱粉植物(如樹薯、馬鈴薯、玉米、地瓜)提煉乾燥而成的細白粉末。外觀潔白細滑,無味,遇水後易成糊狀。依來源與用途不同,常見種類有樹薯太白粉(木薯粉)、地瓜太白粉、馬鈴薯太白粉與玉米太白粉(粟粉)等。

中醫認為,太白粉性平偏涼,味甘、淡,歸脾、胃經。其功效有健脾益氣、和胃生津、清熱解暑、潤腸通便。由於屬植物性澱粉,可助脾胃消化吸收,並具一定的生津止渴之效,常作為脾胃虛弱、口乾舌燥之輔助食材。

在應用上,太白粉為中式與西式料理常用增稠劑與裹粉材料。可用於勾芡湯汁、炸物裹粉、製作圓子、粉條、珍珠、糕點等,使料理滑潤、口感Q彈。亦可作為冷飲與甜品基底,如仙草凍、粉圓、芋圓等。藥膳中有時以太白粉調合藥汁,增稠與改善口感,兼具滋潤與調和作用。
