🠴 黃豆干 🠶

黃豆干(學名源自原料 Glycine max),別稱滷豆干、香豆干、豆乾仔,為豆腐經壓榨、定型後再以醬油或滷汁調味、烹煮或風乾製成的再加工豆製品。其色澤金黃或深褐,質地結實而富彈性。常見種類有五香豆干、煙燻豆干、滷香豆干、辣味豆干等,依調味方式與保存方式略有不同。

性味歸經:黃豆干性平,味甘鹹,入脾、胃、大腸經。具有益氣養血、健脾寬中、潤燥消腫之效,亦可清熱生津、和中解毒。古籍《本草綱目》載「豆腐久煮益氣補虛」,豆干即其延伸之熟食品,性更溫和。

功效方面,黃豆干含植物蛋白、鈣、磷、鐵與卵磷脂,可強筋健骨、補中益氣、降低膽固醇,適合素食或高蛋白飲食者。

應用上,黃豆干常見於滷味、炒菜、火鍋料、便當配菜等,可涼拌或熱食。其濃郁香氣與吸味特性使其成為台灣傳統小吃與便當文化中不可或缺的食材之一。
