白豆干(學名源自原料 Glycine max),別稱水豆干、原味豆干、清豆干,是以黃豆製成豆腐後再經脫水、壓實處理的再製品,質地結實而色澤潔白。常見種類包括原味白豆干、鹽滷白豆干、石膏白豆干、手工白豆干等,依製作工法與凝固劑而異,風味與彈性略有差別。

性味歸經:白豆干性平偏涼,味甘淡,入脾、胃、大腸經。中醫認為其有清熱解毒、生津潤燥、益氣健脾之功,可助脾胃運化,補中益氣而不膩滯。

功效方面,白豆干富含優質植物蛋白、鈣、鐵、卵磷脂與異黃酮,能養陰補虛、強筋健骨、調和腸胃、平衡血脂,適合一般人日常保健食用。
