🠴 蠔油 🠶

蠔油,又稱蚝油、海蠣油、蠔汁,為以牡蠣(蠔)熬煮濃縮而成的調味料,色澤深褐、質地濃稠,味道鮮美帶甘。其原始形式源自廣東沿海,後經改良添加醬油、糖與澱粉增稠。常見種類有傳統蠔油(以蠔汁為主原料)與素蠔油(以香菇、海帶等植物提取物代替蠔製成),另有金蠔油、特級蠔油、鮮味蠔油等商品分類。

中醫認為,蠔油性平,味甘、鹹,歸肝、腎經。其功效為滋陰潤燥、軟堅散結、補肝腎、養血安神。由於取材於牡蠣,含豐富礦物質與胺基酸,能補益精血、養陰清熱,並助於生津與增進食慾。

在應用上,蠔油為中式熱炒與燴菜常用調味料,能提鮮、增香、提色。廣泛用於蠔油牛肉、蠔油芥蘭、蠔油豆腐、蠔油炒麵等料理中。亦可用於醃料、火鍋沾醬、滷汁,提升食材鮮味與濃郁感。素食者常以香菇蠔油替代之,用於涼拌或燴蔬菜,味道近似而不含動物成分。
