🠴 Atlantic Cod 🠶

學名:Gadus morhua 別稱:大西洋鱈魚、北極鱈、真鱈、雪魚、英吉利魚,屬於鱈形目(Gadiformes)鱈科(Gadidae)鱈屬(Gadus)。原產於北大西洋與北極圈海域,為冷水性中大型魚類。體長可達1公尺以上,體側具淡色斑點,腹部潔白,頭大而吻尖,下頜具明顯觸鬚。

常見種類:同屬近緣魚種包括太平洋鱈(G. macrocephalus)與格陵蘭鱈(G. ogac)。其中大西洋鱈肉質最細膩,為傳統高價魚類,常與其肝油並行貿易。

性味歸經:性平,味甘、鹹,歸脾、胃、腎經。

功效:有補氣養血、健脾益腎、潤燥養陰、強壯筋骨之效。其魚肝富含維生素A與D,能明目養血、助骨骼生長;魚肉則補中益氣,適合虛弱、貧血者食用。

應用:鱈魚肉潔白細嫩、無細刺、脂肪含量低,是煎、烤、蒸、炸、燉湯的上等食材。常見料理如「香煎鱈魚排」、「奶油鱈魚」、「鱈魚湯」等。其魚肝可製魚肝油,魚子可醃製為珍饈「鱈魚卵」。鱈魚亦為歐美冬季節慶與北方沿海漁業的重要經濟魚種。
