學名:Gadus macrocephalus 別稱:太平洋鱈、真鱈、北太平洋鱈魚、鱈魚,屬鱈形目鱈科,為寒帶海洋中重要的食用魚類之一。主要分布於北太平洋沿岸,包括日本北海道、俄羅斯遠東及美加西岸等海域。

常見種類:常見商品依漁區分為阿拉斯加鱈(Alaska pollock,實為明太魚)、太平洋真鱈(Gadus macrocephalus)與大西洋鱈(Gadus morhua)。其中太平洋真鱈肉質潔白、油脂適中,為高檔食材。

性味歸經:性平,味甘鹹,歸脾、胃、腎經。

功效:具補氣養血、健脾益腎、潤燥養陰之效。《本草綱目拾遺》記載鱈魚肉可「補虛勞、強筋骨」,適合氣血虛弱、體質虛寒者。其肝油富含維生素A與D,有助視力與骨骼健康。

應用:肉質細嫩、少刺,常用於清蒸、煮湯、煎烤或炸製魚排;魚肝可提煉鱈魚肝油入藥。其白肉入粥或羹湯,味鮮清淡、易於吸收。為日韓料理與歐美飲食中常見高蛋白、低脂肪食材之一。
