青蔥(學名 Allium fistulosum),為百合科蔥屬多年生草本植物,是東亞料理中極為常見的香辛蔬菜之一。別稱有大蔥、香蔥、分蔥、四季蔥、細蔥等。依外形與用途不同,常見種類包括北蔥(大蔥)、南蔥(細蔥)與日本長蔥等。青蔥植株具中空圓筒形葉,味辛香,能提味去腥,亦具藥用價值。

性味歸經:性溫,味辛,歸肺、胃經。

功效方面,青蔥有發汗解表、通陽散寒、行氣化濕、解毒消腫之效。古籍《本草綱目》記載:「蔥能發表,通九竅,去寒氣。」常用於風寒感冒、頭痛鼻塞、食滯腹脹等症狀。蔥白入藥,可配薑湯治外感初起;蔥葉辛香助陽氣流通,有助於驅寒溫中。

應用上,青蔥是台灣與東亞料理中不可或缺的調味蔬菜,廣泛用於湯品、炒菜、滷味、蔥油餅、蔥花蛋等。可作為提香、裝飾或主料,其香氣濃郁能提升菜餚風味、去腥增鮮。青蔥亦可曬乾或冷凍保存,為家庭常備之香料蔬菜。
