學名:無固定學名(主要原料為 Oryza sativa L.,即稻米)別稱:米線、米麵、粿條、米綫、米粉條,為以大米為原料製成的細條狀乾濕食品,在東亞與東南亞地區廣為食用。依地域與工藝差異,可分為乾米粉、濕米粉、粿條、米線等多種形態。

常見種類:以長米粉、粗米粉、細米粉、米線、板條為常見;部分添加木薯粉或玉米粉以增加彈性。台灣常見新竹米粉、彰化米粉及越南米線等不同風味產品。

性味歸經:性平,味甘,歸脾、胃經。

功效:具益氣養胃、和中補虛、易於消化吸收之效。適合體弱或病後調養者食用,亦能補充碳水化合物提供能量。其脂肪含量低、不含麩質,對小麥過敏者友善。

應用:可作為主食或配菜,常見於炒米粉、湯米粉、米粉羹、沙茶米粉等料理。湯用可搭配雞骨、蝦殼熬湯增鮮;炒食則吸收調味料入味佳。亦可與蔬菜、海鮮、豆製品搭配入菜,為台灣與東南亞飲食中常見的
