🠴 Narrow-barred Spanish mackerel 🠶

馬加鰆(學名 Scomberomorus commerson),別稱白鰆、花鰆、土魠魚、馬鮫魚,屬於鯖科(Scombridae)鰆屬(Scomberomorus),是熱帶與亞熱帶海域常見的洄游性魚類,廣泛分布於印度洋至西太平洋,包括台灣周邊海域。其體型細長呈流線形,體色銀灰帶藍綠光澤,兩側具明顯黑斑或橫帶,游速極快,是典型的掠食性魚類。

性味歸經:性平,味甘、鹹,歸脾、胃、肝經。

功效方面,馬加鰆具有補氣養血、健脾益胃、潤膚強筋之效,古籍載「魚肉甘平,補虛益氣,養中開胃」,適合氣血不足、體力衰弱者食用。魚肉脂肪含量適中,富含Omega-3脂肪酸與優質蛋白質,有助促進代謝與保護心血管。

應用上,馬加鰆為食用價值極高的海魚,常見於煎、烤、紅燒、味噌煮或鹽漬乾製等料理。台灣傳統常以土魠魚羹為代表,魚肉酥香滑嫩;亦可製作成魚排、壽司、魚鬆等食品。因其肉質厚實鮮美,營養豐富,是台灣沿海市場與餐桌上的重要魚類之一。
