🠴 Black Pomfret 🠶

學名:Parastromateus niger 別稱:黑鯧、烏鯧、黑鰭鯧、黑昌魚、烏昌仔,屬於鱸形目(Perciformes)鰺科(Carangidae)鯧亞科(Stromateinae)魚類。體型呈橢圓狀且側扁,體色自銀灰至深黑,體表滑潤無鱗,胸鰭略長,尾鰭分叉明顯。多棲息於印度洋至西太平洋熱帶與亞熱帶海域,台灣西部與南部沿海常見,尤以秋冬季為主要漁期。

常見種類:黑鯧為該屬代表種,與白鯧(Pampus argenteus)、金鯧(Pampus chinensis)並稱「三大鯧魚」。其中黑鯧體色最深、肉質最緊實,風味濃郁。

性味歸經:性平,味甘、鹹,歸脾、胃、腎經。

功效:具補氣養血、健脾益胃、潤膚養顏、滋陰補虛之效。《本草綱目拾遺》載其能補中益氣,久病虛弱者宜食。其肉細膩富彈性,蛋白質含量高,脂肪少而營養價值高。

應用:黑鯧適合清蒸、紅燒、煎烤、油炸或煮湯,尤其以「清蒸烏鯧」最能保留鮮甜原味。於台灣常作為節慶年魚象徵「昌盛」,亦可製成乾魚、鹹魚保存。
