白芝麻,學名為 Sesamum indicum L.,又稱胡麻、脂麻、麻子、香油麻,為胡麻科一年生草本植物的成熟種子。依外觀與用途可分為白芝麻、黑芝麻、黃芝麻三類,其中白芝麻多用於榨油與食用,味香質潤。常見品種有台南1號、南投白芝麻、日本白芝麻等。

中醫認為,白芝麻性平,味甘,歸肝、腎、大腸經。具有補肝腎、潤腸通便、養血生髮、潤膚養顏之功效。主治肝腎不足、頭髮早白、皮膚乾燥、腸燥便秘等症。與黑芝麻相比,白芝麻偏於潤燥生津、養膚潤腸,適合氣血不足、體質偏乾者食用。

應用方面,白芝麻可炒熟作香料、入糕餅、拌菜、撒飯、製糖果與芝麻醬等,氣味清香濃郁。榨取之芝麻油(白麻油)為常用食用油,能潤腸、潤肺、解毒。亦常見於中藥膏方或藥膳中,用以增潤與調和藥性。此外,白芝麻富含油脂、不飽和脂肪酸、鈣、鐵、維生素E等營養素,為養生與美容的常用食材。
