🠴 地瓜葉 🠶

地瓜葉,又稱番薯葉、甘薯葉、紅薯葉,為旋花科植物甘藷(Ipomoea batatas L.)的嫩莖與嫩葉。依葉形與品種可分為心形葉、裂葉型、圓葉型等,常見食用品種如台農57號、台農66號等。地瓜葉在台灣為常見的野菜與家常蔬菜,全年皆可採收,尤以夏秋為盛。

中醫認為,地瓜葉性平,味甘微苦,歸脾、胃、大腸經。具有補氣養血、潤腸通便、清熱解毒、降火明目之功效。民間常以其作為補血、促進代謝、改善便秘的食材,尤適合氣血不足或體虛者食用。

應用方面,地瓜葉可清炒、川燙、煮湯、涼拌皆宜,亦可入藥膳搭配枸杞、紅棗調養氣血。其嫩葉柔軟、味甘香滑,常作健康蔬食之首選。在部分地區,地瓜葉亦用於外敷消腫、止癢。由於其易生長且富含營養,被譽為「長壽蔬菜」,為家庭菜園中常見作物。
