🠴 Salt 🠶

鹽,又稱食鹽、海鹽、精鹽、鹽花,是人類最早使用的調味品與保藏劑之一,主要成分為氯化鈉。依製法與產地不同,常見種類有海鹽(由海水蒸發而成)、岩鹽(開採自地下礦層)、湖鹽(鹽湖沉澱物)、竹鹽(以竹筒焙燒海鹽製成)及玫瑰鹽、黑鹽等天然變化型。質地可分為粗鹽、細鹽與片鹽等。

中醫認為,鹽性寒,味鹹,歸腎、胃、大腸經。其功效有軟堅散結、清熱涼血、潤燥通便、引藥下行。鹽能入腎以補水、助火之氣,適度食用可調和五味、增進食慾。外用則能消腫止痛、殺蟲解毒,常用於鹽敷或鹽浴。

在應用上,鹽為調味、醃製、保鮮之要料。可用於炒菜、湯品、滷汁、醃肉、製醬,以增鹹鮮並平衡其他味道。食品加工上常作為發酵調節劑與防腐劑。中藥應用方面,鹽常用於鹽炒藥材,以引藥入腎、增強補腎效力,如鹽炒杜仲、鹽炙地黃等。
