🠴 Brown Sugar 🠶

紅糖,又稱赤砂糖、土紅糖、黑砂糖、黃糖,是以甘蔗汁或甜菜汁經煮煉濃縮後未經完全精製的糖類,保留蔗糖中的糖蜜與多種礦物質,因此呈現棕紅色,氣味香醇。其顆粒細緻或呈塊狀,質地柔潤。常見種類有塊紅糖、顆粒紅糖、黑糖、土紅糖、薑汁紅糖等,依產地與製法略有風味差異。

中醫認為,紅糖性溫,味甘,歸脾、胃、肝經。其功效為補中益氣、健脾暖胃、活血化瘀、緩中止痛、養血調經。特別適用於氣血不足、脾胃虛寒、產後血虛及經行腹痛者。紅糖能溫養氣血、行滯生新,助於恢復體力與促進血液循環。

在應用上,紅糖常用於藥膳、甜品、飲品與烹調中,可製作薑湯、桂圓紅棗茶、黑糖糕、甜湯圓等。入藥時多用以調和藥性、潤燥緩辛,亦能減輕部分苦寒藥物的刺激。烹飪中加入紅糖可增色添香,使菜餚呈現自然紅亮的色澤與濃郁甜香,廣受中式料理與養生飲食喜愛。
