薏仁,學名 Coix lacryma-jobi L. var. ma-yuen (Roman.) Stapf.,又稱苡仁、薏苡仁、六谷米、珠米,為禾本科薏苡屬植物的成熟種仁。依外觀與用途可分為白薏仁、紅薏仁、糙薏仁等,其中白薏仁最常見,為脫殼去皮後的穀粒。

薏仁性涼,味甘、淡,歸脾、胃、肺經。具有健脾滲濕、利水消腫、清熱排膿、除痹止瀉之功效。中醫認為薏仁能滲濕行水、健脾除痹、潤膚祛斑,常用於水腫、腳氣、風濕痹痛、腸胃不適等症,為常用的利濕健脾藥食兩用穀物。

應用方面,薏仁可煮粥、煮湯、磨粉沖泡、入藥膳,常見搭配如薏仁紅豆湯、薏仁百合粥、四神湯等。亦可加入甜品、穀粉飲中作為健康食品。薏仁味淡質潤,適合長期食用,有助於潤膚美白、消腫利濕。其富含蛋白質、維生素B群、礦物質與膳食纖維,為養生與藥膳常見之穀類食材。
