紅菜頭(學名 Beta vulgaris var. conditiva),別稱甜菜、紅甜菜、火焰菜、紅根菜,屬藜科(Amaranthaceae)甜菜屬二年生草本植物。其塊根肥厚呈紅紫色,質地緊密,味甘帶土香。臺灣常見種類有深紅甜菜、圓球甜菜與條根甜菜,主要分布於中北部高冷地區。

性味歸經:性平,味甘,入肝、脾經。具養血活血、潤腸通便、清熱解毒、和中調氣之功。《食療本草》記載其「補血益氣,潤腸止渴」。

功效方面,紅菜頭含有甜菜紅素、鐵、鉀、葉酸與膳食纖維,有助於造血、促進血液循環、保護肝臟與調整腸胃功能。甜菜紅素亦具抗氧化與保護細胞之效。

應用上,可生食、榨汁、烘烤、燉湯或涼拌。常見於沙拉、果汁、湯品及烘焙料理中,其汁液可作天然食用色素,增添鮮紅色澤與營養風味。
