玉米筍(學名 Zea mays L. var. rugosa),別稱嫩玉米、笋玉米、玉米幼穗,為禾本科玉蜀黍的未成熟花序,採摘時尚未授粉,外形細長如筍而得名。常見種類有甜玉米筍、白玉米筍、黃玉米筍等,依品種與成熟期略有差異。

性味歸經:玉米筍性平,味甘淡,入脾、胃、膀胱經。具有健脾和胃、利水滲濕、清熱解毒、潤腸通便之效。中醫認為其嫩質含水豐富,能生津止渴、清心除煩,適合暑熱季節食用。

功效方面,玉米筍富含膳食纖維、維生素B群、胡蘿蔔素、鉀與鎂,有助促進腸胃蠕動、維持代謝平衡,並可輔助降脂與穩定血壓。

應用上,玉米筍質地脆嫩、清甜可口,常用於清炒、涼拌、湯品、火鍋或燒烤料理,亦可與蝦仁、菇類同炒,或入西式沙拉中增添口感。其清爽甘甜、外型秀雅,是蔬食料理中常見的配菜素材。
