🠴 White Corn 🠶

白玉米(學名 Zea mays L. var. saccharata),別稱白粟米、白珍珠玉米、糯玉米,為禾本科(Poaceae)玉米屬一年生草本植物。其穀粒呈乳白或象牙白色,外觀晶潤,質地柔糯。臺灣常見種類有糯性白玉米、甜白玉米與早熟白珍珠玉米等,多分布於嘉南平原與花東地區。

性味歸經:性平,味甘,入脾、胃、腎經。具健脾和中、利水滲濕、補益氣血、潤腸通便之功。《本草綱目拾遺》載其「補中益氣,利小便,安腎養心」。

功效方面,白玉米富含澱粉、植物蛋白、膳食纖維、鉀、鎂及維生素B群,能增強體力、幫助代謝、促進腸道蠕動並調節水分平衡。

應用上,白玉米可蒸、煮、烤、燉湯或入粥,味甘柔潤,適合作甜品或鹹食。其湯汁香甜可作湯底,玉米鬚亦可煎湯作為利尿、消腫的傳統食療材料。
