大黃魚(學名 Larimichthys crocea),別稱黃花魚、金鱗魚、黃姑魚、黃瓜魚,屬於石首魚科(Sciaenidae)黃魚屬(Larimichthys)。原產於中國與台灣沿海溫帶及亞熱帶海域,尤以東海、閩南及台灣西部海域為盛。體側扁呈橢圓形,體色金黃閃亮,鱗大而整齊,腹部略銀白,為著名的經濟魚種與節慶食材。

性味歸經:性平,味甘、微鹹,歸脾、胃、腎經。

功效方面,大黃魚有補氣養血、健脾益胃、安神養心之效,《本草拾遺》記載「黃魚甘平,補中益氣,養血潤膚」。其肉質細嫩、低脂高蛋白,富含膠原蛋白與礦物質,適合體虛、貧血及產後調理者食用。

應用上,大黃魚為高級食用魚,常以清蒸、紅燒、香煎或砂鍋燉煮方式呈現原味。魚頭與魚骨可熬製鮮湯,湯色乳白、味道鮮美;魚肚膠質豐富,常入藥膳或滋補湯品。台灣與福建沿海居民常以之為年節宴席主魚,象徵「金玉滿堂」。

習慣稱其為「大黃魚」以區分同屬的 小黃魚(Larimichthys polyactis),外觀金黃、肉質鮮美,因此又有「金鱗魚」或「金黃魚」等俗稱。
