🠴 Pho Noodles 🠶

河粉(學名:Rice Noodle Sheets),又稱沙河粉、腸粉、粿條、米篩目等,源於中國廣東沙河鎮,後廣泛流行於華南與東南亞地區。主要以粳米或在來米漿為原料,蒸製成薄片後切條或卷成片狀。外觀半透明、質地柔滑富彈性。常見種類依形狀分為:寬條河粉、細河粉、腸粉皮與炒粉條;依用途分為乾炒型、湯粉型與涼拌型。

性味歸經方面,河粉味甘、性平,入脾、胃經,屬五行「土」。具有益氣養胃、補中和血、潤燥生津之效。米製食品能穩定血糖供能,適合體虛、食慾不振及消化功能弱者。由於蒸製後性質溫和,易於消化吸收,可作主食或佐餐。

功效上,河粉能補充能量、改善脾胃虛弱、潤腸通便。宜搭配蔬菜、豆芽、牛肉、蝦仁等高蛋白或高纖食材同食,以平衡營養。常見應用包括廣式乾炒牛河、越南河粉湯(Phở)、鮮蝦腸粉、豬肝湯河等料理。炒食香氣濃郁、湯食柔潤順口,能兼顧飽足與養胃之效,是華人飲食中代表性的米製麵食之一。
