芫荽(學名 Coriandrum sativum L.),別稱香菜、胡荽、芫荽葉、香荽,為繖形科(Apiaceae)一年生草本植物。原產於地中海沿岸,後廣泛栽培於亞洲各地,臺灣各地農村與市場常見。依品種不同,可分為大葉香菜、小葉香菜與短莖香菜等,葉形、香氣略異。

性味歸經:性溫,味辛,入肺、脾經。

功效方面,芫荽具發汗透疹、健胃消食、理氣開胃、驅風解毒之效。《本草綱目》載其「能發痘疹、去惡氣、開胃進食」,主治感冒初起、麻疹不透、食欲不振等。其辛香之氣可通陽氣、散寒滯,亦能調和脾胃、促進消化。

應用上,芫荽多作為調味香草,在中式、越南及泰式料理中皆常見。可生食作涼拌菜、湯品點綴、粥麵添香,或搭配海鮮、豆製品以除腥增香。芫荽子(即胡荽子)則可作藥材或香料,研粉後常用於咖哩、滷味及香料酒中。
