🠴 Greenland cod 🠶

學名:Gadus ogac 別稱:格陵蘭鱈、綠地鱈、北極鱈魚、寒帶真鱈,屬鱈形目鱈科鱈屬,主要分布於格陵蘭島、加拿大北岸及北大西洋寒冷海域。其外形與太平洋鱈(Gadus macrocephalus)相似,但體色略深、脂肪含量較高,肉質更為緊實。

常見種類:依漁區與市場分類,常見為格陵蘭真鱈(Gadus ogac)、大西洋鱈(Gadus morhua)及太平洋鱈(Gadus macrocephalus)。其中格陵蘭鱈多作為冷凍魚片出口,風味濃厚,常與其他鱈類並列高緯食材。

性味歸經:性平偏溫,味甘鹹,歸脾、胃、腎經。

功效:有補中益氣、養血強筋、潤燥養陰之效。其肉質細膩,適宜虛弱、久病體乏之人食用;魚肝油可滋補肝腎、明目益精。古方以其性溫不燥,宜冬令補養。

應用:常見於清蒸、炙烤、紅燒或魚湯料理;其肉入粥可補虛養胃。格陵蘭鱈亦為北歐傳統乾魚、鹽漬魚(stockfish)主要原料之一,為重要寒地高蛋白食品。
