🠴 鵪鶉蛋 🠶

學名:Coturnix coturnix japonica 別稱:鵪蛋、鶉蛋、小雞蛋。為鵪鶉之卵,體型小巧,外殼有棕褐斑點,質地細膩,風味濃郁,常見於家常菜與藥膳之中。

常見種類:依飼養品種分為日系鵪鶉蛋、歐系鵪鶉蛋、台灣土鵪鶉蛋等;依加工方式又有滷鵪鶉蛋、鹹鵪鶉蛋、真空包熟蛋等。

性味歸經:性平,味甘,歸脾、腎經。

功效:具有補益氣血、滋陰潤燥、強筋健骨、益腦安神之效。《本草綱目》記載:「鵪鶉蛋益氣養血,補虛損。」古人視其為「動物人參」,能調養虛弱體質,改善疲勞與貧血。亦助於養顏潤膚,對氣陰兩虛者有益。

應用:常見於滷、煮、燉湯、冷盤等料理,如滷鵪鶉蛋、紅燒獅子頭佐鵪鶉蛋、花雕醉鵪鶉蛋。中醫藥膳中常與黃耆、枸杞同煮,用於補血益氣、潤肺安神。因體積小巧、口感滑嫩,也常用於兒童與病後調理食譜中。
