🠴 Lateolabrax japonicus 🠶

日本真鱸(學名 Lateolabrax japonicus),別稱七星鱸、花鱸魚、真鱸、海鱸,屬於鱸形目鱸亞目真鱸科(Lateolabracidae),是東亞地區常見且具高經濟價值的魚種。分布於日本、韓國、中國沿岸及台灣西部與北部海域,棲息於河口、沿岸及近海沙泥底地帶。外形修長,體色銀灰帶青黑,體側具散布暗斑,鱗細而緊密,肉質潔白細緻,味道鮮美。

性味歸經:性平,味甘,歸脾、胃、肝經。

功效方面,日本真鱸具有補氣益血、健脾養胃、安胎益精之效,《本草綱目》記載鱸魚「補五臟,益筋骨,利腰膝」,適合病後體虛、脾胃虛弱、孕婦養胎之食用。其肉含高蛋白、低脂肪與多種胺基酸、微量元素,有助於強化免疫力與促進新陳代謝。

應用上,日本真鱸為高級食用魚,可清蒸、紅燒、鹽烤、湯煮,亦常見於刺身或壽司料理中;在中式藥膳中常與生薑、枸杞同煮以補氣健脾。台灣沿海地區也有養殖,為節慶宴席與補養料理的上品魚材。
