🠴 金目鱸魚 🠶

學名:Lates calcarifer 別稱:金目鱸、花鱸魚、亞洲鱸、海鱸魚、七星鱸,屬於鱸形目(Perciformes)鱸亞目(Percoidei)尖吻鱸科(Latidae)尖吻鱸屬(Lates)。此魚原產於印度洋至西太平洋沿岸,在台灣、東南亞與澳洲北部均為常見經濟魚種,廣泛分布於河口、潟湖及沿岸海域,能適應鹹淡水環境,為重要養殖與食用魚。

常見種類:主要為亞洲金目鱸(Lates calcarifer),另有部分混稱之地區性亞種或養殖品系,如澳洲鱸(Barramundi)。

性味歸經:性平,味甘,入脾、胃、腎經。

功效:有補氣養血、健脾益胃、強壯筋骨、助生肌之效。《本草綱目拾遺》載其「補中益氣,和血養肝」。古法認為其肉質細嫩、脂少而不膩,可助氣血運行並強健體魄。

應用:金目鱸肉質潔白、刺少且富彈性,常用於清蒸、紅燒、煮湯、煎烤等料理。其魚皮含膠質,常見於高湯或藥膳。亦可作為產後或術後調理的食補食材,兼具營養與藥食兩用價值。
