🠴 油麵 🠶

油麵(學名:Oil Noodles),又稱黃麵、鹼水油麵、熟麵,為中式傳統鹼性麵條之一。以小麥粉、水、鹼水與食用油製成,經壓延、切條後汆燙熟化並拌油防黏,色澤金黃、質地滑彈、帶有鹼香。常見種類有細油麵、寬油麵、全蛋油麵、竹壓油麵等,依麵條粗細與含蛋比例不同而風味略異。

性味歸經:味甘、性平微溫,入脾、胃經,五色屬「黃」,五行歸土。具補中益氣、養胃健脾、增強飽足、潤燥和中之功。由於含鹼性物質與少量油脂,對腸胃有潤滑作用,可中和胃酸、促進消化。油麵富含碳水化合物與植物蛋白,是補充能量與修復體力的常見主食。

應用方面,油麵廣泛用於台灣與閩南料理中,如滷麵、炒麵、湯麵、擔仔麵、肉燥麵、麻醬麵等。因其熟化後保存性佳、下鍋即煮,烹調時間短,常用於小吃攤與家庭速食。湯煮則滑順柔軟,乾拌或炒製則吸附醬汁、口感Q彈不爛。部分地區亦將其油炸或涼拌,作為節慶或拜拜供品,象徵長壽與豐足。
