🠴 紅麵線 🠶

紅麵線(學名:Red Wheat Vermicelli),又稱紅壽麵、紅線麵、喜慶麵線,為傳統中式細麵線的變化型。以小麥粉、水與鹽為基底,加入紅麴粉或食用紅色素調製,使麵條呈淡紅或深紅色,象徵吉祥與長壽。麵體細長柔韌,經日曬或烘乾後可長期保存,烹煮後色澤紅潤不退。常見種類包括紅麴麵線、紅鹼水麵線、紅蛋麵線、日曬紅麵線等。

性味歸經:味甘,性平微溫,入脾、胃經,五色屬「赤」,五行歸火。具補中益氣、健脾養血、調和氣血、溫陽安神之功。紅麴含有天然發酵成分,可促進血液循環與新陳代謝,兼具增色與養生效果。麵線本身易消化吸收,適合氣虛體弱或產後調養者食用。

應用方面,紅麵線常見於壽宴、滿月、婚慶、節慶祭祀等場合,象徵「長命百歲、吉慶延年」。常搭配麻油雞、紅燒豬腳、壽桃蛋食用,形成節慶菜餚。烹調方式多為煮湯、乾拌或炒製,湯汁可襯出紅色亮麗麵身,兼具視覺與味覺之美,是中華傳統文化中極具祝福寓意的長壽象徵食品。
