🠴 金鯧魚 🠶

學名:Trachinotus blochii 別稱:金鯧、白鯧仔、金錢魚、黃鯧魚,屬於鱸形目(Perciformes)鯧科(Carangidae)鯧亞科(Trachinotinae),為暖水性海洋魚類。其體形近圓而側扁,體色銀白帶金黃色光澤,尾鰭深叉,外觀極具金屬感,因而得名「金鯧」。主要分布於台灣沿岸、南海、印度洋及西太平洋熱帶海域,為台灣重要的食用及養殖魚種之一。

常見種類:以金鯧(Trachinotus blochii)最為常見,另有銀鯧(Trachinotus anak)及人工養殖的改良品種。

性味歸經:性平,味甘鹹,入脾、胃經。

功效:具補氣健脾、養血益氣、潤膚和中之效。古法認為金鯧可「補中益氣,助食健體」,適用於脾胃虛弱、氣血不足者。魚肉細嫩,易於消化,亦被視為養生與恢復體力的優質蛋白來源。

應用:金鯧肉質鮮甜、脂肪含量適中,可清蒸、煎煮、紅燒或炭烤;節慶時常作為象徵富貴與吉祥的料理,如「清蒸金鯧」或「紅燒金鯧」,在台灣與華人飲食文化中地位重要。
