🠴 鰭鯧魚 🠶

學名:Pampus echinogaster 別稱:鰭鯧、白鯧仔、日本白鯧、刺鰭鯧,屬於鯧科(Stromateidae)鯧屬(Pampus),為台灣常見且具經濟價值的近海魚類。其體側扁、形似圓盤,體色銀白略帶藍灰光澤,胸鰭及背鰭略長,故名「鰭鯧」。主要分布於西太平洋海域,包括日本、韓國、中國沿海及台灣西部近海,多棲息於水深 20–100 公尺的沙泥底層。

常見種類:鰭鯧 (Pampus echinogaster) 為主,與白鯧 (Pampus argenteus)、黑鯧 (Parastromateus niger) 同屬近似魚類,常被混稱為白鯧。

性味歸經:性平,味甘鹹,歸脾、胃、腎經。

功效:具有補氣益血、健脾開胃、潤膚養顏、益腎強身之效。《本草拾遺》記載鯧魚「主補中益氣,令人肥健」,適合氣血虛弱、食欲不振或體力不足者食用。

應用:鰭鯧魚肉質潔白細緻、脂肪含量適中,適合清蒸、乾煎、紅燒、鹽烤或煮湯;魚皮富含膠質,常用於滋補料理;於台灣常作為節慶與祭祀供魚,並可製成冷凍或乾製魚品以延長保存。
