🠴 蒟蒻麵 🠶

蒟蒻麵(學名:Konjac Noodles),又稱魔芋麵、蒟蒻絲、蒟蒻細麵、低碳麵,以蒟蒻(Amorphophallus konjac)根莖粉為主要原料,加入水與氫氧化鈣凝固成型後切絲製麵。麵體半透明、彈滑、有韌性,無明顯味道但能吸附湯汁與醬料。常見種類包括白蒟蒻麵、黑蒟蒻麵(含海藻粉)、蒟蒻拉麵、蒟蒻義大利麵等。

性味歸經:味辛微苦、性涼,入肺、脾、大腸經,五色屬「白」,五行歸金。具清熱化痰、降脂通便、消腫排毒、健脾利水之功。蒟蒻富含葡甘露聚醣(膳食纖維),可促進腸胃蠕動、延緩糖分吸收、降低膽固醇,適合減重與糖尿病飲食控制者。熱量極低、飽足感高,有助維持體重與血糖穩定。

應用方面,蒟蒻麵常作為低碳或生酮飲食的主食替代品,廣泛用於冷拌、湯麵、火鍋、沙拉、炒麵中。日式料理常見蒟蒻涼麵、關東煮蒟蒻絲;西式則以其取代義大利麵搭配番茄或奶油醬汁。因吸味性佳且無澱粉黏性,適合注重健康與輕食族群,為現代健康飲食的重要替代麵品之一。
