🠴 白胡椒粉 🠶

學名:Piper nigrum L. 別稱:又稱白胡椒、白胡椒末、白椒粉,為胡椒果去外殼後乾燥研磨而成的香辛料。與黑胡椒同源,但製程不同,使其辛香更柔和,常用於亞洲與歐式料理中。

常見種類:依產地與研磨粗細分為馬來西亞白胡椒、印尼白胡椒、越南白胡椒、海南白胡椒等。細粉香氣濃烈,粗粉則辛香持久;市售亦有混合型胡椒粉以增層次。

性味歸經:性溫熱,味辛;歸胃、大腸經。

功效:具溫中散寒、下氣消痰、開胃助食、止瀉除濕之效。能驅胃寒、促進消化、提振食慾,亦可改善腹脹與寒性腹瀉。中醫認為其辛散之氣可通達腸胃、振陽暖中。

應用:廣泛用於湯品、醃料、海鮮、白肉、羹汁等料理中,如白胡椒雞湯、胡椒豬肚湯、炒花枝等。亦可與鹽、蒜、薑同用作調味基礎,增添食材的清香與暖辛風味。
