老薑(學名 Zingiber officinale Roscoe),別稱黃薑、成熟薑、老根薑、乾薑(曬乾後),為薑科(Zingiberaceae)多年生草本植物的地下莖。與嫩薑相比,老薑質地堅硬、纖維多、辛香濃烈,是中式料理與藥膳的重要辛香料。臺灣常見種類有本島薑、竹薑、南薑等,依用途可分為食用與藥用兩類。

性味歸經:性溫熱,味辛,入肺、脾、胃經。

功效方面,老薑具有溫中散寒、回陽通脈、發汗解表、溫肺止咳之效,常用於治療風寒感冒、嘔吐、腹痛、寒痰咳嗽、手足冰冷等症。《本草綱目》記載其「散寒發表,溫中止嘔」。此外,薑辛能行氣,亦可助消化、祛濕止痛。

應用上,老薑廣泛用於煮湯、爆香、紅燒、燉補、泡茶,能去腥提味並驅寒暖身。常見於薑母鴨、薑茶、麻油雞等料理中,亦可製作薑糖、薑湯以養生驅寒。
