小黃瓜(學名 Cucumis sativus L. var. angusticarpus),別稱青瓜、胡瓜、刺瓜,為葫蘆科一年生蔓性植物,果形細長、表皮青綠帶刺,質地清脆、味道清香。常見種類有刺黃瓜、滑皮小黃瓜、日本小黃瓜、迷你黃瓜等,依外皮粗糙度與果長短不同而分。

性味歸經:小黃瓜性涼,味甘,入脾、胃、大腸經。中醫認為其有清熱解毒、生津止渴、利尿消腫、潤膚美容之功,適用於口渴煩熱、尿少水腫、肌膚乾燥等症狀。

功效方面,小黃瓜含有維生素C、鉀、鎂、膳食纖維與葫蘆素,能促進代謝、排除體內濕熱、降低血壓,並具輕微抗菌作用,有助調整消化機能與維持皮膚彈性。

應用上,小黃瓜常用於涼拌、醃漬、炒菜、沙拉或夾餡料理中,尤以涼拌黃瓜、醋漬小黃瓜、黃瓜炒蛋等最為普遍。其清爽多汁、易消化,是夏季開胃、消暑的代表性蔬菜之一。
