🠴 Chub mackerel 🠶

學名:Scomber japonicus 別稱:花鯖、真鯖、日本鯖、青花魚、花飛魚,屬於鯖科(Scombridae)鯖屬(Scomber),為海洋中層洄游性魚類。主要分布於台灣沿海、日本、中國東海至南海、菲律賓及印度洋東部等溫帶至亞熱帶海域。體形紡錘狀,體背藍綠色具波紋狀黑斑,腹部銀白,是常見的食用海魚。

常見種類:主要為日本鯖(Scomber japonicus),另有近似種如大西洋鯖(Scomber scombrus)與澳洲鯖(Scomber australasicus),外觀相似但分布地區略異。

性味歸經:性平,味甘鹹,歸脾、胃經。

功效:有補氣養血、健脾和中、潤膚養顏、強筋壯骨之效,古籍記載鯖魚肉可「益氣血、潤肌膚」。

應用:肉質緊實、油脂豐富,適合煎、烤、滷、煮湯或製成壽司、鹽燒。在日本常作為味噌煮鯖、鯖壽司,台灣亦常見於鹽烤、乾煎或紅燒料理。其魚油含豐富脂肪,味香濃郁,是家庭與餐館常見的海鮮食材。
