大西洋鯖魚(學名 Scomber scombrus),別稱花鯖、花飛、青花魚、花鰹,屬於鯖科(Scombridae)鯖屬(Scomber),原產於北大西洋海域,包括歐洲沿岸、地中海及北美東岸。體型細長、呈紡錘形,體背藍綠色帶黑色波紋斑紋,腹部銀白光亮,鱗細小、皮滑。其游速快、洄游性強,是冷溫帶重要的經濟魚種之一。

性味歸經:性平,味甘、鹹,歸脾、胃、腎經。

功效方面,大西洋鯖魚具補氣養血、健脾益胃、潤膚養顏、強筋壯骨之效,古籍記載其肉「甘平而補虛,久食益氣血」,有助氣血生化與滋養筋骨。其富含DHA與EPA等不飽和脂肪酸,能潤燥養陰、助腦健智。

應用上,鯖魚為常見的食用與加工魚種,可煎、烤、紅燒、味噌煮或煙燻。日式料理中常見的鹽烤鯖魚、鯖壽司尤為著名。由於其肉質緊實、油脂豐富、風味濃郁,適合搭配酸味或香料料理,是世界各地常見的高營養海魚。
