🠴 嘉鱲魚 🠶

真鯛(學名 Pagrus major),別稱赤鯛、紅鯛、加吉魚、真加吉,屬於鯛科(Sparidae)真鯛屬(Pagrus)。原產於西北太平洋海域,分布於日本、韓國、中國與台灣沿海,是著名的高經濟價值魚類。體型橢圓側扁,體色鮮紅而閃耀,背鰭具尖棘,尾鰭呈分叉形,具典型「鯛形」外觀。常見種類除野生真鯛外,亦有人工養殖紅真鯛、白真鯛等品系。

性味歸經:性平,味甘,歸脾、胃、肝經。

功效方面,真鯛具有補氣益血、健脾開胃、安神養心之功,古籍記載其肉可「益氣充形,調中補虛」,適合氣血不足、體弱者食用。魚肉脂肪含量低、蛋白質高,為養生與病後恢復佳品。

應用上,真鯛肉質緊實、味道鮮美,是日式料理如刺身、壽司、鹽燒、清蒸的重要食材;在台灣與中式料理中亦常見於紅燒、清湯、味噌煮等。其魚頭、魚骨可熬湯,味甘鮮濃,為宴席及節慶象徵「吉祥如意」的上等魚種。
