赤鯮 Dentex Hypselosomus,中文名赤鯮,又稱紅鯮、赤點仔,屬於鯛科(Sparidae)魚類,廣泛分布於日本、韓國、中國及台灣沿岸等西北太平洋地區。赤鯮體型呈橢圓形、側扁,體色鮮紅至橙紅,背部較深,腹部略帶銀白,外觀艷麗。其棲息於水深50至200公尺的砂泥或岩礁底層,屬中大型掠食性魚類,主要以小魚、甲殼類及軟體動物為食。

性味歸經:性平,味甘、微溫,歸脾、胃、腎經。

功效方面,紅鯛鯮有補虛益氣、健脾養血、強筋壯骨之效,古籍記載其肉「益氣充形,和中調胃」,常用於調理氣血虛弱與體力不足者。魚肉富含蛋白質與鈣質,脂肪含量低,是理想的滋養食材。

應用上,此魚肉質細嫩、味道甘鮮,可清蒸、鹽烤、紅燒、湯煮皆宜;尤其以清蒸或煮湯最能凸顯其鮮香原味。其頭骨及魚肚含膠質豐富,常用於燉湯養顏。在台灣沿海漁市場中,紅鯛鯮屬於受歡迎的高級海魚之一,常作為宴席佳餚。
